On Thursday 1st June, Dialogue organised an Italian Summer Festival dining experience for Parmigiano Reggiano at Brand Exchange in London.
The event was hosted by Eleonora Galasso, an Italian cookery writer and self-styled food interpreter, who has recently published her first cookery book, As the Romans do: Authentic and Reinvented Recipes from the Eternal City.
Eleonora cooked 5 dishes that featured Parmigiano Reggiano for the event:
Tables were decorated with gingham table cloths, summer flowers, fresh herbs and tea candles. Guests were welcomed with a glass of Prosecco and a tasting of 18 month and 30 month Parmigiano Reggiano, which were also the ages that Eleonora featured in her dishes.
Once guests were seated for the meal, Eleonora spoke about the product and the inspiration behind each dish. There was a preparation table at the front of the room where she cooked the pasta dish in front of the guests.
Guests were invited to ask questions and Eleonora spoke about the history and versatility of Parmigiano Reggiano. She also shared how Parmigiano Reggiano is such an essential product to Italian cooking, and included personal stories about learning to cook with this special cheese.
After feasting on one of Italys finest products and enjoying wine from Emilia Romagna, guests finished the evening with an Italian spring in their step.
